Rosemary chicken and basil fusilli

Hmmm, why don’t I have a little garden at the balcony soon since I have been cooking different recipes using almost the same herbs and spices everyday, my ever favorite rosemary, parsley and basil?  With these three, most likely you can turn everything into epic dishes.

Yesterday I made myself pasta the way I want it– Rosemary and mustard marinated chicken basil fusilli. It was very easy to make that’s why I have been making the same dish for lunch and dinner yesterday and lunch today. Ha!

If you haven’t tried cooking pasta before, I want to let you know that pasta’s the easiest food to make. Surprise your love ones by making them this simple yet so delicious food. Let’s cook!

Preparation time 20minutes.

Boneless chicken, (fusilli, penne) pasta, rosemary, mustard,

basil, butter olive oil, cherry tomatoes, salt and pepper

STEP 1. Boil some water in a deep pan or caserolle.

STEP 2. While waiting to boil, chop the chicken into smaller pieces (cubes or strips)  then put it in a bowl to marinate with rosemary and mustard. Make sure you mix it well. Add a little salt and pepper.

STEP 3. As soon as the water boils, put the pasta and leave it for 8-10min with medium heat. If you want to make sure it’s al dente, try a piece.  Add salt and pepper.

STEP 4. As soon as the pasta is ready, drain it and transfer the pasta into a bowl. Heat the pan/caserolle before putting a little nit of butter then drops of olive oil to sauté the garlic.

STEP 5. Add those cherry tomatoes then the chicken. Just keep sautéing until the chicken is ready, (around 8-10min)

STEP 6. Time to add the pasta then the basil leaves. Keep mixing for a minute!

Bon Apetit!

Pan-cooked Salmon Steak

img_8195  I’ve been indulging myself and eat only delicious and healthy food for the past week! And I didn’t have to spend so much money on restaurants just to satisfy all my cravings.

This Salmon Steak was only worth SD10-13 spiced with rosemary, parsley and slices of lemon (and tomato) plus sweet potato on the side.

I’m satisfied on how everything turned out even if I just made this recipe. I’m giving my two thumbs up for this so far and recommend you to try it! Remember, you don’t have to be a chef to make some amazing food, just one who appreciates fine food and drinks.

(You will need 30minutes of preparation.)

300g Salmon, Butter, Olive oil, Rosemary, (with or without parsley), mustard, lemon, pepper, garlic,

(I added the tomato before it’s too late to eat it)

img_8199STEP 1. Take the salmon and dress with mustard.

STEP 2. Chop the Rosemary leaves and rub around the salmon before you sprinkle a little bit of salt and pepper.
STEP 3.
Slice some lemon then put it on he top of salmon.

(While you wait to marinate, chop the
sweet potato into wedges including the garlic and tomato.)

STEP 4.  Heat the pan before putting the butter then add a little bit of olive oil so it won’t get too burnt. When it’s hot enough, put the garlic.

img_8200STEP 5. As soon as the garlic turned a little bit golden, you can now put the salmon then tomatoes around. (If there’s more space around it, you can also put the potatoes so it can get soft while waiting for the salmon to be ready.) Cover the pan, slow the heat then wait for 8-10minutes.

STEP 6. Take the salmon out then you can now use the same oil to sauté those sweet potato wedges. Let it absorb all those ingredients.

STEP 7. Take those sweet potatoes then place it on the side.

Chimpkin Soup (Chicken and Pumpkin)

When I was young, our village always cooked “Pancit”, “Sopas” and Filipino style Spaghetti. While most kids stood on long queues just to have the famous spaghetti, I was going back and forth until there’s still soup left inside the big casserole.

I will always love Sopas wether it’s a hot or cold weather. It’s simple and so easy to make! As soon as you know the basic ingredients you can make any soup you want.

Today, you are lucky because I am going to teach you the 4 EASY STEPS in making a healthy and delicious soup. After this, you’re good to go!!Ready?
(You can add your own desired ingredients)

I am going to name this one “Chimpkin Soup”. I guess you already know why.

STEP 2. Take the chicken out of the water (broth)to chop into smaller pieces (you can keep the bones for a tastier soup). Transfer the broth in another container so you can use the same pan to saute’ the meat and other vegetables with onion and a little but of garlic.  (make sure your pan is big enough).

STEP 3. Heat the pan before putting the slice of butter then wait until it melts before putting the garlic and onion. Once both almost looked golden, you can put the chicken(meat) and the turkey ham(sausage or your choice of ham).

(Keep sautéing for 2minutes before adding all your choice of vegetables.)

STEP 4. Pour the chicken broth before it gets dry then wait for 5minutes before pouring the milk. Since I used turkey ham which is already a little bit salty, I only added a little bit of salt, bay leaf and more pepper because I love pepper!

(Let it boil until all the vegetables are ready then garnish it it with parsley as it simmer.)
